Homemade Macaroni and Cheese

This is the creamiest macaroni and cheese I have ever made. I wished I would have used the small shells to make this but all I had was the elbows. I cooked the macaroni first and then started on the sauce. I beat an egg in a small bowl. I melted the butter in the pan and added the flour to make a rue. After cooking the rue for a couple of minutes I added in the milk until creamy and tempered the egg with some of the milk mixture. I also added in the seasonings at this point too. After that had thickened I added in the egg and stirred and then the cheeses. Stirring until creamy, I then poured it over the macaroni and combined it all together. I baked it until it got bubbly.

Here is the final result, very creamy and delectable.

  • 4 c dried macaroni
  • 1 egg
  • 1/2 c salted butter
  • 1/4 c flour
  • 2 1/2 c milk
  • 1 1/2 t dry mustard
  • 1/2 t salt
  • 1/2 t pepper
  • 1 lb cheese of your choice

Heat oven to 350 degrees
Cook the macaroni until just about done.
Melt the butter and add the flour and whisk until thickened and the flour smell is out.
Add in the milk a little at a time until it thickens
Add a little of the milk to the egg so it doesn't become scrambled eggs.
Add in the seasonings and the tempered egg mixture.
Add in the cheese and stir until combined.
Put the macaroni into a 9"x 13" pan.
Pour the sauce over the top and combine.
Bake in oven until bubbly about 20 minutes.
