Peanut Butter Marinade

Peanuts are an integral part of West Africa. They are grown in many households mainly for consumption and to increase economic development. June of every year marks the beginning of peanut harvest season in Cameroon. After harvesting, we boil some and eat with roasted corn, shell some and dry out before frying. After which the fried peanuts are ground to a paste and used in peanut stew or groundnut stew as we call it. This paste is the hero ingredient in my Peanut butter marinade.

I constantly try out different marinades in which I could soak meat, fish or chicken before cooking. Using peanuts as the base combined with other ingredients was definitely 5-star and turned out so good.

Though i prefer making peanut butter from scratch, store bought peanut butter can be used in this recipe.

Ingredients

  • 1 tbsp vegetable oil
  • 1 large onion
  • 1 spring onion
  • ¼ cup fresh parsley
  • 1 sprig thyme
  • ½ red bell pepper
  • 4 slices ginger (¼ inch thick each)
  • 3 garlic cloves
  • 2 tbsp peanut butter
  • ¼ cup water
  • 2 tsp seasoning powder
  • 2 tsp salt
  • 1 tsp white pepper ( Penja pepper)
  • 2 tbsp vegetable oil (as topping)
  • 1 kg chicken wings
Instructions

Pour oil into a hot skillet. Add onion,spring onion, parsley, thyme, bell pepper, ginger and garlic. Fry for 5 minutes in order to release flavor.
To a blender, add the fried veggies, peanut butter and water. Blitz to a smooth paste.
Pour into a bowl and add vegetable oil, seasoning powder, salt and white pepper. Mix and top with vegetable oil.
Pour ¾ of the marinade over chicken wings and place in the refrigerator for 30 minutes. Set aside the rest of the marinade for later.
Heat grill to medium heat and oil grill grates. Add wings and cook for 10 minutes on each side. It will take 20 minutes for the wings to be cooked through.
Use the rest of the marinade as a dipping sauce for your wings. Enjoy!

    what is seasoning powder? Substitutions?

      Seasoning powder is any flavour enhancer. I normally use seasoning from the brand Knorr but you can use any all purpose seasoning you have available.

    Still not sure what seasoning powder is. Do you mean an herb blend? "Powder" to me means garlic powder or chili powder, a true "powder."

      It is any bouillon powder or granulated bouillon cube of your choice. I hope this is clear enough. If not, I can attach pictures
