Vegan Berry Cookies (with Cranberries, Blueberries and Walnuts)

After so many unhealthy, sugary Christmas cookies and sweets, it feels so good to eat something less unhealthy, so I thought I would share this very simple oatmeal cookie recipe with you. I have to honestly admit, this isn’t a new recipe, I came up with this years ago, but an oatmeal cookie never goes out of style so I thought I would post it anyway. Not to mention that my New Year’s resolution is also to eat vegan food most of the week, so this vegan cookie recipe can be a perfect choice for myself as well. I know it is too late for a New Year’s snack idea, but I hope you’ll try it anyway.

Ingredients

  • 160 g of margarine, melted until browns and cooled
  • 2 cups of spelt flour
  • pinch of salt
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1/2 cup brown sugar
  • vanilla extract
  • 2 chia egg substitute (2 Tbsp. chia seed soaked in 5 Tbsp. water)
  • maple syrup
  • dried cranberries
  • walnuts, chopped
  • fresh blueberries
Instructions

First, in a big mixing bowl whisk together all the dry ingredients (the flour, salt, cinnamon, baking powder, sugar).
In a different mixing bowl mix the wet ingredients (the margarine, vanilla, chia seeds, maple syrup).
Pour the dry ingredients into the flour mixture and combine them using your hands.
Place baking paper on a baking sheet. Form balls from the dough (about 1 Tbsp. portions) and flatten them on the sheet. Push berries and the walnuts into the top of the cookies.
Bake them for 20 minutes at 180C/350F.
