Sometimes I do silly things: for instance, signing up for my second half-distance triathlon, which will be coming up in May (eeks! remember when I used to joke about this being a real thing?). And then sometimes I do incredibly smart things: say, making the best post-training snack EVER in the form of these Honey Fruit Waffle Parfaits.


The toughest part about training for a long-distance sport isn’t the time. It isn’t the energy, or the ten workouts a week, or the fact that you go through all your clean underwear so quickly that you’ve resorted to buying industry-grade laundry detergent for your personal use. As any experienced triathlete will tell you, the one thing that can make or break your training regimen–and race day momentum–is simple: Nutrition. And that’s exactly what I love most about these Honey Fruit Waffle Parfaits–they’re nutritious and delicious! In between those layers of whole milk Greek yogurt + berries + honey, I opted to use Van’s® Power Grains® Original Waffles, which delivers that perfect balance of wholesomeness that you (plus your family, plus the whole darn world!) can feel good about eating. They also pack a whopping 10-12g of protein and 9-11g of whole grains like cracked red wheat, steel cut oats, millet, and brown rice per serving, which is EXACTLY what my wobbling legs need after a 17-mile torture fest fun run around town. Also, I don’t know what monster took over and wrote that last statement about running 17 miles anywhere because that honestly sounds like borderline subversive activity, but I digress.



My favorite part about this Honey Fruit Waffle Parfait, though, is just how easy it is to make and customize! While I recommend using the Power Grains® Waffles and some heavy-duty Greek yogurt if you’re looking for a good post-workout recovery snack, you can just as easily sub in soy yogurt if you’re dairy-free, swap out berries for your choice of fruit, and even try some of Van’s other waffle varieties, which are awesome if you have particular dietary needs (gluten free, dairy free, egg free, nut free, etc. etc. etc.). In the wise words of Donkey from Shrek… I’m makin‘ Honey Fruit WAFFLES Parfaits! Stack it, work it, EAT IT ALLLLLL!

I ended up raiding the Ralph’s aisle for extra snacks, e.g. Van’s Gluten Free The Perfect 10® Crackers, which are GF (of course), baked with oats/brown rice/millet/quinoa/amaranth, and contain 16g of whole grains. I also grabbed their light & crispy Gluten Free Blueberry Waffles and Gluten Free Apple Cinnamon Waffles, which are made with whole grain brown rice flour, sweetened with fruit juice, and contain a stunning 21-23g of whole grains per serving–and they’re also dairy/egg/artificial stuff/cholesterol/corn-free AND non-GMO project verified. How’s that for qualified? I aspire to be as multi-talented as these waffles someday, seriously.

Ingredients

  • 1 cup whole fat vanilla Greek yogurt (or your choice of yogurt)
  • 1 Van’s® Power Grains® Original Waffle, toasted and cut into 1-inch squares
  • 1/2 cup fresh assorted berries (or your choice of fruit)
  • 1 tablespoon honey
Instructions

In a medium jar or tall glass, layer half of the yogurt, waffle pieces, and berries. Repeat with remaining yogurt, waffle pieces, and berries, then drizzle on top with honey. It's as simple as that!
