Each season is rich with its own ingredients, fruits, vegetables, produce, etc.


Taking advantage of seasonal ingredients gives the opportunity to be more creative with meals. This summer exotic salad is colorful, healthy, and filling.


It has the right balance of protein: introducing middle eastern akkawi cheese with black sesame seeds that adds an interesting texture and twist, fruits: the orange that contrasts with a refreshing taste, herbs: basil for a nice kick, and vegetables: lettuce and broccoli for a solid base of nutrients.


Note: Soak cheese in hot water for 1hr (to desalt) then slice - can use halloumi cheese too if akkawi not available.

Ingredients
For the Salad
  • - 2 cups lettuce shredded
  • - 2 Lebanese cucumbers diced
  • - handful cherry/grape tomatoes cut in half
  • - 1 orange diced
  • - handful black olives pitted
  • - 300g Akkawi cheese
  • -roasted broccoli (optional)
  • - dash black sesame seeds
  • - a couple of basil leaves for decoration
Instructions
For the Dressing
- 1/3 cup olive oil
- juice of 1 lemon
- salt to taste

Combine all salad ingredients and mix with dressing. Enjoy.
