We all look for healthy options throughout the day and there is not doubt that a fruit salad is not only a healthy option for lunch or a snack for the kids after school, but it also makes an insanely great addition to a brunch buffet table or as a lighter fresh option on a dessert table.


You can really do any combination of your favorite fruits, or omit one you don't care for, but whichever combination you decide to use, make sure you toss it in this simple honey-lime vinaigrette. It brightens up the whole salad and an extra citrusy punch with a hint of sweetness.

Ingredients

  • 1 large lime, zested and juiced (about 2 tbsp)
  • 2 tbsp honey
  • 2 large mangoes, diced
  • 1 lb strawberries, sliced
  • 1 pint blueberries
  • 1 pineapple, cored and cubed
  • 4 clementines, peeled and segmented
Instructions

In a medium mixing bowl, using a microplane, zest the lime and then squeeze the lime juice into the bottom of the bowl. Add in the honey and whisk together until honey dissolves.
Prepare all the fruit and add into the mixing bowl. Toss gently with a spatula until the all the fruit is lightly coated in the honey lime vinaigrette.
To serve, you can either keep in a large serving bowl or place in individual cups with a small spoon or cocktail fork.
