St. Patrick’s Day is in just a couple of weeks and I just had to share this delicious, fudge-y, yet cake-like Mint Chocolate Cake Brownie Recipe with y’all early! I think it can hold its own against my Guinness Chocolate Cupcakes and my Irish Dirt Cakes, because, oh goodness, these tastes like a childhood memory! Exactly like a Mintwich, or two chocolate cookies with mint chocolate chip ice cream between them. When I was a little kid, my dad worked for a dairy that made them and I always got one in the summer time!

Anywho, enough about me, let’s get to this recipe. First, you’re going to whisk your dry ingredients together.

Once your flour and cocoa powder is mixed, you’ll melt together some butter and chocolate. Yup. Make shift a double broiler using a small sauce pan with a glass bowl on top. Just make sure the water and bowl don’t meet.

Whisk those bad boys together until smooth. Really smooth. Don’t let that butter bully you and stay in clumps. You want it so smooth, you’re tempted to stick a straw in and just slurp it down.

Turn off the heat and whisk in some sugar. I was snobby and used my Fair Trade, Organic Raw sugar because I can and it gives off a sweet flavor using less sugar. I view that as a win! Then, carefully remove the bowl and marry in four eggs and vanilla extract. Fold in to the dry ingredients and if you’re feeling crazy, put in a couple cups of chocolate chips! Bake then cool. Once cool, spread on a mint butter cream frosting filled with more chocolate chips and thank me in the comments!

MINT CHOCOLATE CAKE BROWNIE RECIPE

Ingredients for Brownies

  • 1 1/3 Cups AP Flour
  • 3 TBS Unsweetened Cocoa Powder
  • 11 Oz Chocolate Chips/Squares
  • 1 Cup Butter; softened
  • 1 1/4 Cups Raw Sugar (Or 1 Cup White Sugar and 1/3 Brown Sugar)
  • 2 tsp Vanilla
  • 3 Cups Chocolate Chips (Optional)

Directions

  1. Preheat oven to 350 degrees, prep a 9×13 pan.
  2. Sift or whisk flour and cocoa powder.
  3. Melt chocolate and butter in double broiler.
  4. Turn off heat and whisk in sugar and vanilla.
  5. Remove from heat and marry in 4 eggs, whisk until well blended.
  6. Bake 35 minutes.
  7. Cool.

Ingredients for Frosting

  • 1 Cup softened butter
  • 4-6 Cups Powdered Sugar
  • 1/2 Cup Milk
  • 4 tsp Mint Extract
  • 8 drops green food coloring

Directions

  1. Whisk butter and four cups powdered sugar together.
  2. Add milk.
  3. Add more sugar if too liquid-y. Should form soft peaks.
  4. Add extract and food coloring.
  5. Ice cool brownies. Allow to set in fridge if desired.
