Searching for a yummy spice cookie recipe? We have you covered, and this spice cookie is gluten free too!

I have been craving something sweet and spicy... I love spice cake, and spice cookies... even though it's spring on the calendar, it is still a little cool outside... and rainy this weekend... not my favorite weather... so I decided staying in was a good option and creating a new cookie recipe was what I settled on Sunday afternoon.


I was out of pure vanilla so I had to use an imitation. Walmart has great prices on almond and cashew flours. If you have never baked with them, it can get pretty costly.

I had some more bananas on hand so I decided to use them, and I also had a package of dates... I thought hmm... maybe adding some cinnamon to those two ingredients would be good... here is what I came up with and I have to say, they are very moist, and Mr. Vintage approved of them too.


I got out our food processor since I decided I did not want to hassle with the small food processor and mixer... I just mixed up all of my ingredients in the big food processor. Less clean up time, I had a lot to do this weekend... so I tried to make things more simple for me.

I never thought having a food processor was a big deal, but as I get older, I will say they are a time saver, and they are pretty easy to use. The one above has so many attachments that came with it and you can use it for so many things. Gluten Free Spice Cookies

1 package (8 oz) pitted dates

2 ripe bananas

1 c gluten free oats

1/2 c almond flour

2 eggs

1/2 t sea salt

1 t vanilla

1/2 t cinnamon

1/2 t ground cloves

1/2 t gingerbread spice

1/2 t pumpkin pie spice

Preheat over to 350 degrees.

Place dates in food processor, mix until mostly smooth, add in bananas, oats, and almond flour. Mix together. Add in eggs, vanilla, and spices. Spoon onto cookie sheets, bake for 11 minutes.



They may not look like much, but there is no added sugar to these cookies, and they are very sweet and spicy! Fruit and honey are great ways to sweeten foods so you do not need to add sugar to your cookies. You could also add nuts to these cookies, I am not a big fan of nuts in cookies, not sure why, but I have never really liked them. Next time, I think I will chop up a few dates and throw in when I do a final mix.


Mr. Vintage likes spice cake and cookies too. He really liked this recipe and then I told him there was no sugar added to them. He could not believe it! When I have time to create something new, I get pretty excited when the recipe turns out! Who doesn't, right? I had the dates on hand and wanted to try something different... we typically have bananas in the kitchen since I bake with them often.

I try not to purchase prepackaged items and I enjoy having something sweet when I crave it. I will definitely will be making this recipe again. They were delicious!
