The Best No-Bake Gluten-Free Vegan S’Mores Bars
An easy one-bowl recipe (I’ve adapted it from Crazy For Crust) that can be made in the microwave in 5 minutes with only 5 ingredients. Summer treats don’t get better than that! Loaded with chocolate, graham crackers, mini marshmallows, and a dash of coarse sea salt, you’ll be licking the spatula clean before you know it.
So Easy To Make: Only 5 ingredients and one bowl are needed. You’ll be enjoying a s’mores bar in no time.

Chocolate Chips: Can a sweet treat ever have too much chocolate? I think not! And you can use whatever kind of chocolate chip you like best.
Dietary/Lifestyle Friendly: Whether you’re gluten-free, egg-free, nut-free, vegan, dairy-free, or “regular” this recipe can be adjusted to suit your specific allergy, lifestyle, and/or dietary needs.
S’Mores Bar Ingredients & Substitutions
As always this recipe is gluten-free and vegan. That said, I do test each recipe with “regular” ingredients and make notes of alternatives or swaps so that everyone can enjoy it.
Chocolate Chips: I adore using Pascha vegan chocolate chips but any brand, type, or size of chocolate chip will work in this recipe. Use whatever best fits your dietary/lifestyle needs.
Graham Crackers: I like Kinnikinnick’s gluten-free vegan graham crackers but you could use any brand you have. Cereals such as Golden Grahams and Chex are also great alternatives if they accommodate your dietary needs.
Coconut Oil: This can be swapped for butter, ghee, or shortening.
Mini Marshmallows: Dandies mini marshmallows are a fabulous vegan option. If you are not vegan, any brand will work. I don’t recommend using the regular size though.
Coarse Sea Salt: Salt helps to balance the sweetness but can be omitted or swapped with regular sea salt or kosher salt.
Step By Step Instructions
1. Prepare an 8×8-inch pan with parchment paper and non-stick baking spray.
2. Combine the chocolate chips and coconut oil in a large bowl and heat in the microwave in 30-second intervals until fully melted and smooth. This can also be done stovetop in a pan if desired. It took me four 30-second intervals in my microwave for the chocolate to be fully melted.
3. Add in the graham crackers, mini marshmallows, and salt (if using) and gently fold together.
4. Pour the s’more mixture into the pan and allow to chill for 1 hour or until firm. Enjoy!
Removal: For easy removal, prepare the baking pan with 2 pieces of parchment paper and then a generous spray of non-stick baking spray. Use the parchment paper edges as handles to gently remove the s’mores bars.
Chilling Time: Let these vegan no-bake s’mores bars chill until set. Generally, about 1 hour in the fridge will do the trick. For a quicker chill, place in the freezer. Be careful to not bite into frozen bars though.
Texture: Meant to be crunchy, they have a wonderful crispy texture. If you’d like less of a crunch factor, chop the graham crackers up finer.
Temperature: Seeing as how these simple no-bake treats are held together by chocolate, keep them chilled until ready to serve.

Will This Recipe Double?
Absolutely. If you would like to double the recipe use a 9×13-inch baking pan.
What’s the difference between a s’mores bar and a s’mores rice krispie treat?
Rice krispie treats are traditionally held together by melted marshmallows while these no-bake bars are held together by chocolate.
Can I Use Different Chocolate Chips?
Yes. Feel free to use whatever kind of chocolate chip you have on hand or prefer. Milk chocolate, semi-sweet, dark, or even white chocolate. Yum!
Serving: Cut into squares once fully chilled and serve as is. Enjoy around the campfire for the full s’more experience without the stress.
Storing: Store in an airtight container in the fridge for up to 2 weeks.
Freezing: Freeze in an airtight container for up to 6 months. Note that the chocolate may appear dull when thawed. This is due to the sugar crystal freezing on the surface.

Ingredients
No-Bake S’Mores Bars
- 1 bag (250g) vegan chocolate chips
- 1 tablespoon (15ml) coconut oil
- 3 cups (135g) vegan mini marshmallows
- 3 cups (224g/approx 14 crackers) gluten-free vegan graham crackers, roughly chopped into pieces
- 1 teaspoon coarse sea salt
- optional: addition graham crackers and salt for sprinkling on top
Instructions
No-Bake S’Mores Bars
- Prepare an 8Ă—8-inch pan with parchment paper and non-stick baking spray.
- In a large microwave-safe bowl, combine the chocolate chips and coconut oil.
- Heat in 30-second intervals, stirring after each interval, until fully melted and smooth. Allow to cool for 1 minute.
- Add in the mini marshmallows, chopped graham crackers, and salt (if using) and gently fold together.
- Pour the s’mores mixture into the prepared pan and firmly press down. Top with additional graham cracker pieces and/or crumbs and coarse sea salt if desired.
- Place in the refrigerator and allow to chill until set. Slice and enjoy!
- Store leftovers in an airtight container in the fridge for up to 2 weeks or frozen for up to 6 months.
