Cranberry Sauce Bars

Holiday meals are so great, but leftovers are inevitable. Cranberry sauce can be especially tricky, and yet you always feel like you should save it. This recipe gives that bowl of cranberry sauce a purpose! Make a simple dough, press half into a brownie pan, then spread with cranberry sauce and crumble the remaining dough on top. Bake 30-35 minutes, then cool before serving. Don't have quite enough sauce? Supplement with some fruit jam - just think of all the flavor possibilities!

Ingredients
Dough
  • ½ cup sugar
  • 1 ½ cups flour
  • ½ teaspoon baking powder
  • ½ cup butter softened
  • 1 egg yolk
Filling
  • 2 cups cranberry sauce
Instructions

Preheat oven to 375F. Prepare an 8×8 pan by greasing or lining with parchment paper.
In a medium bowl, stir together the sugar, flour and baking powder. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly.
Press half the dough into the prepared pan.
Spread the cranberry sauce over the dough to make an even layer. Crumble remaining dough over the cranberry layer.
Bake in preheated oven for 30-35 minutes, or until top is slightly brown. Cool completely before cutting into squares.
Tips
  • Less sauce can be used, the cranberry layer will just be a little thinner. You can also supplement the cranberry sauce with a little fruit jam if desired.
