Brie and Blackberry Galette

This is a great recipe to serve at lunch, brunch, or for cocktails with guests. It was super crispy and had a wonderful flavour. This galette was a big hit when I made it recently and it looked really rustic. I probably should have pulled the sides up a bit more to keep the brie from leaking out a bit. I loved the combination of blackberry with balsamic reduction and fresh thyme. If you have never made a galette it is super easy to do and will look impressive. I served it for lunch with a side salad. I hope you enjoy my recipe as much as I did making it.

Ingredients

  • 1 sheet puff pastry 
  • 1 round 8 oz of Brie 
  • 1 pint fresh Blackberries
  • Drizzle honey 
  • Drizzle balsamic reduction 
  • Pinch flaky salt 
  • 2 sprigs Thyme, fresh
Instructions

Preheat the oven to 375 degrees follow the instructions on the puff pastry or pie crust packaging.
Thinly slice the brie.
Unwrap the puff pastry sheet and place it onto a parchment-lined baking sheet.
Begin to layer the brie slices in the middle of the dough, leaving 2-3 inches around the perimeter.
Place the blackberries on top and in between the brie slices.
Fold the edges of the dough slightly over the edges of the filling, encasing all the way around. Drizzle honey and balsamic reduction on top.
Place thyme and pinch of salt on top of the galette and bake for 22-25 minutes, or according to the puff pastry package instructions.
If the galette isn't golden brown by 25 minutes of bake time, bump the heat to 400 degrees and cook an additional 5-7 minutes.
Serve immediately while hot!
