I have been making my own pancakes from scratch for 12+ years. Not that pancake mix is too expensive to buy but there is a different taste that just warms the soul on a Saturday morning. We love to eat breakfast for dinner and usually consists of these pancakes. My kid's favorite is when you add chocolate chips to the batter - everything is better with chocolate!


You can eat these plain, add chocolate chips, blueberries, top with peanut butter, nutella, whip cream, strawberries, raspberries, jam, maple syrup, or fruit syrup.


Next time you have a brunch try these pancakes and do a pancake bar with all the toppings. I usually have to do those toppings every time because I have some members of my family that do not like maple syrup! Can you believe it?! One thing is for sure, everyone will LOVE waking up to these pancakes on Saturday morning. Enjoy!

The way to get the perfect golden brown pancake is to only flip it once. Wait for those bubbles to start forming all over before you flip. It will be golden brown and be sure to NEVER press down on the pancake with the spatula after you flip. They will not be light and fluffy if you squeeze out all the air!

Ingredients

  • 1 1/4 C Flour
  • 3 tsp Baking Powder
  • 1 Tbsp Sugar
  • 1/2 tsp Salt
  • 1 Large egg
  • 1 C Milk
  • 2 TBSP Canola oil or melted butter
Instructions
Mixing it up
Add all dry ingredients into a bowl.
Add wet ingredients into a bowl and mix.
Add wet mixture to dry mixture and mix until blended. Do not overmix!
Use 1/4 C or 1/8 C measuring cup to get even shaped circles.
Grease griddle and put on 325 degrees
pour batter and wait for bubbles to form then flip. Do not flatten, let the pancake cook for about a minute or until golden brown. Dish up and top and eat up!
