Grilled Chicken Wrap With Spicy Peanut Sauce

This grilled chicken wrap recipe is kid friendly and lots of fun to make. It's great for a mid-week meal, and doesn't take long to make. The best part of this recipe is the sensational pairing between the wrap and the spicy peanut sauce. The wrap is filled with flavorsome strips of chicken breast, juicy green beans and fresh grated carrot. The peanut sauce is where the bulk of the flavor comes in, so don't skip the sauce! However, alter the amount of spicy chili sauce you add depending on how you like it. You can also substitute spicy chili sauce with sweet chili sauce if you prefer it a little sweeter.

Ingredients
Wrap
  • 1 chicken breast
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic granules
  • 1 heaped cup of frozen green beans
  • 1 carrot
  • 3 wraps
Peanut sauce
  • 3 tbsp peanut butter
  • 1 tbsp teriyaki sauce
  • 1 tbsp spicy chili sauce
  • 1 tbsp soya sauce
  • 3 tbsp water (approximate)
Instructions
Wrap
In a small pan over medium heat, heat 1/2 tsp olive oil. Once hot and sizzling, lie chicken breast in the pan and season with 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp garlic granules. When the chicken begins to whiten, flip it over and cook until it has whitened, all the way through, and is beginning to brown on the sides. This process should take around 10 minutes. Set aside to cool.
Preheat the oven to 150 degrees Celsius/ 300 degrees Fahrenheit.
In a small pan over medium heat, heat 1/2 tsp of olive oil until hot. Add in the green beans. Add in 1/2 tsp salt, 1/4 tsp pepper and 1/4 tsp garlic granules. Stir beans around until they have defrosted and softened. This should take around 15 minutes. Set aside to cool.
Peel and roughly grate the carrot, set aside.
Place wraps in preheated oven for 5 minutes to warm and soften them.
Cut chicken breast into thin strips.
To assemble, lay wrap flat, place chicken strips, beans and carrot in the middle third of the wrap. Make sure to leave space at the bottom and top so you can fold it in after. Don't fill the wrap too much otherwise you wont be able to fold it neatly, fold one side in, followed by the other, then tightly close the wrap by folding the bottom and op inwards as well. Cut the wrap in half and plate for serving.
Peanut Sauce
In a small bowl combine all the ingredients except for the water. Then, add one tablespoon of water until your desired consistency is reached.
Tips
  • I like to place my wraps back in the fry pan for a few minutes once put together, this helps keep the wrap together and adds a delicious crunchiness too!
