Healthy Banana Bread

I don't know anything about making real bread and letting it rest, raise, the whole thing seems complicated. But Banana bread is EASY!! I would compare it more to making cupcakes or muffins then actual bread.

Anytime I have bananas that have gotten to ripe, I mush them up with a fork.

All add the dry ingredients into the bowl:

½ teaspoon salt

½ teaspoon ground cinnamon


1 teaspoon baking soda (NOT baking powder; they aren’t the same)

Add 1 ¾ cups flour and mix.

Then add all the wet ingredients in.

⅓ cup extra-virgin olive oil

½ cup maple syrup

2 eggs

¼ cup milk of choice or water

1 teaspoon vanilla extract

Whisk all the ingredients well for several minutes until it is smooth.

Grease a loaf pan and pour the ingredients in the pan.

Bake the loaf for about an hour at 325 degrees Fahrenheit.

You will know its ready by sticking a toothpick in and pull it out without clean. It will also begin to crack on the top.

This is a great recipe for little ones! The baby loves banana bread and no added sugar other then the syrup! Win Win :)

  • 2 mashed ripe bananas
  • ¼ cup milk of choice or water
  • 1 teaspoon baking soda (NOT baking powder; they aren’t the same)

  • 1 ¾ cups flour
Instructions

mash up over ripe bananas
mix all dry ingredients in a bowl
start adding wet ingredients
whisk well
grease a loaf pan and pour in mixture
bake at 325 for one hour
