Turkish Toast

So you've heard of Turkish eggs before, but today it is Turkish toast! This is mainly because I didn’t have any pita bread and I’m trying to work with whatever I have in my fridge / freezer. Essentially it is the exact same idea, just served on a piece of toast! This is a perfect one-person meal and the flavor is so impressive for how easy it is to make.


Poaching eggs can be difficult for some so a fried egg works just as well! My favorite way to poach an egg is by bringing a pot of water to a simmer (not boil), and crack the egg into a small bowl first. Then you just gently pour it into the water for a few minutes. That's it!

Ingredients


  • 1/4 cup butter to a pan
  • 1 tbsp paprika
  • 1/2 tbsp cumin
  • 1/2 cup plain Greek yogurt
  • 1 minced garlic clove
  • a squeeze of lemon
  • s&p to taste
  • feta cheese to garnish
  • fresh parsley and or dill to garnish
  • 1 egg

Instructions


Add 1/4 cup butter to a pan on low heat then season with paprika and cumin. Stir the butter until it browns (it will start to bubble and turn darker in colour). Set aside then get a bowl to Mix 1/2 cup plain Greek yogurt with 1 minced garlic clove, a squeeze of lemon, and s&p. Add the yogurt mix to a piece of toast then top with an egg, the spiced brown butter, feta cheese, and fresh herbs
