Sausage White Bean Soup
This sausage and white bean soup screams comfort food! It is full of deep savory flavors that make you feel warm from the inside out.

Start by sautéing the onion, carrots, garlic and sausage until
soft and slightly brown. This creates a sweet caramelization in the soup.
Then add the white beans, chicken stock, thyme and bay leaf and let simmer for 30min.
Add the spinach and Parmesan and stir. Serve right away with your favorite bread.

Ingredients
- 1lb andouille sausage, sliced into quarters
- 2 tbsp olive oil
- 1 small, yellow onion, diced
- 3 carrots, diced
- 2 tbsp minced garlic
- 2 15oz cans of White Northern Beans
- 4 cups low sodium chicken broth
- 5 cups fresh spinach
- 1/3 cup grated parmesan
- 2 bay leaves
- 3 fresh thyme sprigs
Instructions
- Heat olive oil in a large pot over medium heat
- Add onion, carrots, and garlic. Sauté until softened, about 5 minutes.
- Add sausage and cook until browned, about 5 minutes
- Add chicken stock, white beans, thyme and bay leaf.
- Reduce heat to low, cover and simmer for 30 minutes
- Add spinach and Parmesan cheese and stir
- Serve with a side of corn bread or other favorite bread if desired.
Tips
- Store in the refrigerator for up to 5 days.
- Freeze in ziplock bags for up to 3 months.
