This sausage and white bean soup screams comfort food! It is full of deep savory flavors that make you feel warm from the inside out.

The beauty of this soup is that the ingredients are so full of flavor, you don’t have to let it cook all day. Simply let it simmer for 30 minutes and you have a flavorful soup that tastes like it has been cooking all day!

The white beans and spinach provide extra fiber and nutrients that make this soup a healthy dinner for your whole family.

Start by sautéing the onion, carrots, garlic and sausage until

soft and slightly brown. This creates a sweet caramelization in the soup.

Then add the white beans, chicken stock, thyme and bay leaf and let simmer for 30min.

Add the spinach and Parmesan and stir. Serve right away with your favorite bread.

Nothing screams home sweet home like a good ol fashion homemade soup!
