Super Easy Chicken Nuggets

I have been looking for some interesting things to do with chicken other than my super easy standard chicken francaise. I've scoured cookbooks, questioned friends, yeah, yeah, I pinned, but a lot of the recipes fell short.


Lesson learned, a gorgeous photo does not always equal a delicious dish.


Then I remembered this one for battered cutlets from my college days...who knew that cutting chicken into cubes could make all the difference?


Well, it does! They took no time to make and cooked up quick.


I served them with my popcorn rice and a veggie, but they go with everything and everyone loves them.

Ingredients

  • 2-3 pounds of chicken breast cubed
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 cup of flour
Instructions

Place all ingredients together in a large zippy bag and mix them up by squeezing the bag, until the chicken is well coated.
Add a thin coat of oil to bottom of large skillet and cook until done. You only need a few minutes per side.
I used corn oil, but you can use olive oil if you prefer.
Tips
  • You can also bake them if you choose, just put them on a baking sheet and bake for 25 minutes at 350 degrees.
