This Citrus Cheesecake Cookies are a bit crunchy on the outside and oh so soft on the inside. They seriously melt in your mouth!

them with orange and lemon zest, but you can pretty much use any extract or essence

What are the ingredients to make citrus cheesecake cookies?


To make this low-carb cheesecake cookies recipe you are going


to need the following ingredients:


  • cream cheese
  • coconut flour
  • butter
  • egg
  • erythritol
  • vanilla extract
  • orange zest
  • lemon zest


Now that you have all


the ingredients to make cheesecake cookies follow the steps below.

Using a large bowl, add the butter and cream cheese and creamed well.

Once the butter and cream cheese are creamy add the erythritol and mix until it is slightly fluffy.

Add the orange and lemon


zest, vanilla extract and egg to the mixture.

well.

Once you have mixed all


the ingredients it is time to slowly add the coconut flour and mix until no lumps


are showing.

The cookie dough will be


firm, if it is not firm, add a Tablespoon of coconut flour to the mixture.

Cover and refrigerate


the dough for 15 minutes and after that pre-heat the oven to 350F degrees.

Remove the mixture from


the fridge and using a tablespoon form small cookie and place them to a parchment


paper covered baking pan.

Bake the cookies for


about 12 minutes or until they are golden brown.

Allow the cheesecake


cookies to cool before removing them from the baking tray.

Ingredients

  • 4 Tbsp cream cheese
  • ½ Cup coconut flour
  • ⅓ Cup + 1 Tbsp butter
  • 1 Egg
  • ½ Cup erythritol
  • 1 Tsp vanilla extract
  • 1 Tsp orange zest
  • 1 Tsp lemon zest
Instructions

In a bowl beat eggs until light and fluffy (around 2 minutes). Incorporate erythritol and vanilla extract.
Mix in coconut flour, baking powder, and melted butter mixing well after the addition. Slowly incorporate almond flour.
Place a skillet over medium heat, pour around ⅓ Cup of batter and cook for 2 minutes or until bubbly, flip and cook for 1 more minute.
