This dish, my husband likes the most, its taste is acquired, and suitable for everyone, children and adults. I made this dish without dairy ingredients, but of course you can sprinkle grated parmesan on top of the dish, which adds a special flavor to the dish! The Bolognese sauce is undoubtedly one of the most beloved Italian classics. This is a sauce that is anchored in restaurant menus, but no less, at the family dining table at home, and quite a few of us have already grown up on it and also served it as parents of children after school. This version of Bolognese sauce is light and simple, but delicious and satisfying for all ages and for any purpose. It is important to season the sauce continuously and gradually during the cooking stages as written in the recipe, While we build the sauce and add the raw materials, in order and at the right time.

Instructions
How to prepare:
Put the onions, carrots and celery in a food processor, coarsely cut. Process the vegetables until they are finely chopped or you can of course chop the vegetables by hand, chop finely.
In a large saucepan, heat the oil over medium-high heat, add the vegetables we chopped in a food processor and fry for about 5 minutes, until the liquids secreted by the vegetables evaporate.
Add the crushed garlic and fry for about a minute.
Add the minced meat and fry while stirring and breaking down the meat into crumbs. Fry until the meat changes color to gray, about 5-7 minutes.
Add the paprika and puree and mix. Add the crushed tomatoes, water, dry oregano, dried basil, bay leaves, sugar, black pepper and salt.
Bring the saucepan to a boil.
When boiling, transfer the pot to the smallest heat, cover the pot so that the lid is half open and cook for about 3 hours, gently boiling, until the sauce really thickens and there is almost no liquid left.
Remove the bay leaves, chop the basil leaves and add to the saucepan. Stir and extinguish the fire.
Now you can make whatever pasta you like. Bring to a boil a large saucepan with plenty of water and salt , add the pasta and cook until it is ready. Drain the pasta from the water and add the pasta directly to the Bolognese sauce. Mix and serve.
If you do not eat the pasta and sauce immediately, rinse the pasta with cold water so that it does not crystallize and store the sauce and pasta separately in the refrigerator.
