This apple cinnamon baked oatmeal recipe is easy to make, loaded with simple, delicious ingredients and is the perfect make ahead breakfast! It’s also low in sugar and easily customizable to your liking.

Baked oatmeal was a new concept to me not too long ago, but I’m so happy I gave it a try. Oatmeal has always been one of my favorite breakfasts, especially overnight oats, and my kids love it too! Now we have yet another option when it comes to breakfast! Oatmeal can be made so many different ways and with endless different flavors, so it really is one of the best breakfast options in my opinion!


Baked oatmeal is no exception to the endless possibilities of flavor combinations. You really can’t go wrong. You can make it healthy, not so healthy, loaded with yummy chocolate chips or healthy bits of fruit. Whatever you fancy, it’s easy to incorporate into baked oatmeal. This apple cinnamon baked oatmeal is a really simple recipe that includes wholesome ingredients and can be adapted to fit your tastes.

WHAT IS BAKED OATMEAL?

Baked oatmeal is essentially an oatmeal casserole. Made with oats, a sweetener, some eggs and a few other ingredients, then baked in the oven, it turns into oatmeal that you can cut into squares and serve warm with a little maple syrup, some whipped cream or fresh fruit! It’s just another way to make oatmeal a little more interesting.

WHAT ARE THE BEST APPLES TO BAKE WITH?

Often in recipes you’ll see them call for baking apples, but what does that mean? A baking apple is a type of apple that is firm and hardy. These types of apples will be able to stand the heat when they’re baked and keep their shape. Even though they soften and melt into whatever dish you’re baking, you should still be able to see nice chunks of apples throughout your baked good.


When baking, I like to use apple varieties like Galas, Honey Crisps and Granny Smiths. Although the flavor profiles of each of these apples differs, they all taste wonderful in whatever I’m making. However, in this recipe, you can really use whatever type of apple you have on hand!

HOW TO MAKE APPLE CINNAMON BAKED OATMEAL

TOOLS YOU MAY NEED

  • Mixing bowl
  • Mixing spoon
  • Measuring cups and spoons
  • 8 x 8 casserole dish


INGREDIENTS

  • 3 cups rolled oats
  • 1/4 cup brown sugar
  • 1 tbs ground flax seeds
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 cups milk of choice
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup chopped apples


DIRECTIONS FOR MAKING APPLE CINNAMON BAKED OATMEAL

Preheat the oven to 350°F and grease an 8 x 8 casserole pan with a little bit of coconut oil and set aside.


Chop your apples and set aside.

In a medium mixing bowl, combine rolled oats, brown sugar, flax seeds, cinnamon and salt.

To the dry ingredients, mix in milk, maple syrup, coconut oil, eggs and vanilla.

Fold in the chopped apples to the oatmeal.

Add the apple cinnamon oatmeal mixture to a greased 8 x 8 casserole dish.

Bake your cinnamon apple oatmeal for 25 to 30 minutes or until a toothpick comes out clean.

NOTES

  • I like to use hardy baking apples in this recipe, but use whatever type of apples you have on hand.
  • I keep the skins on my apples for this recipe, but you can peel them if you prefer.
  • This recipe uses rolled oats, but you can use quick cooking oats if that’s what you have on hand. Just note that you may need to bake them for a shorter amount of time.
  • If you want to keep this recipe totally refined sugar free, substitute the brown sugar with the same amount of maple syrup.
  • You can substitute the maple syrup for the same amount of brown sugar.
  • Serve this apple cinnamon baked oatmeal warm or cold!

HOW TO STORE BAKED OATMEAL

Store this apple cinnamon baked oatmeal in the refrigerator in an airtight container for up to a week. You can enjoy this warmed up in the microwave or in the oven. You could also eat it cold and it’s equally delicious! After this baked oatmeal has been in the refrigerator, you may want to add a little maple syrup, heavy cream, whipped cream or milk as it tends to dry out the longer it’s refrigerated.
