These cookie bars are everything you love about chocolate chip cookies but with toasted pecans, a hint of buttermilk, and spread in a pan for ease!

All right, now who doesn't love dessert bars?!  Especially when they're chocolate chip, amiright?  Let's up that ante here though with Chocolate Chip Pecan Buttermilk Cookie Bars.

Super easy, these bars! Very reminiscent of your favorite chocolate chip cookie but these are spread out in a pan for easy baking for a crowd (or fewer!). The bonus here is toasted pecans and a hint of buttermilk.

These cookie bars come together quick in a stand mixer, the process being just like chocolate chip cookies. Then just spread them in a 9x13 baking pan!

What you end up with is a slightly chewy, a bit crunchy, a hair gooey yet totally over-the-moon yummy cookie bar, sweet but not too sweet, a hint of salt to balance it out....just a tasty dessert bar.

Serve them up as-is or add a dollop of vanilla ice cream and maybe some hot fudge atop for a delicious sundae!

Yes these are as heavenly as they appear, I am not joking.

Ingredients

  • 2 1/4 cups (150 g) all-purpose flour
  • 1 teaspoon (12 g) baking soda
  • 1 teaspoon (6 g) fine sea salt
  • 3/4 cup (141 g, 12 tablespoons) unsalted butter, room temperature
  • 3/4 cup (149 g) granulated sugar
  • 3/4 cup (160 g) brown sugar, packed
  • 2 tablespoons (30 ml) vegetable oil
  • 1 large egg
  • 1/4 cup (59 ml) buttermilk, room temperature
  • 1 teaspoon (5 ml, 5 g) vanilla extract
  • 3/4 cup (128 g) chocolate chips
  • 1 cup (114 g) chopped pecans, toasted
Instructions

Begin preheating the oven to 350° F (176° C) and lightly grease a 9x13 metal baking pan (see note below).
In a small bowl, mix the dry ingredients, the flour, baking soda, and fine sea salt together with a fork or a whisk.
In the bowl of a stand mixer or large bowl for an electric mixer, cream the granulated sugar, brown sugar, and butter together for about 1 1/2 - 2 minutes.
Scrape the bowl well then add the vegetable oil, egg, buttermilk, and vanilla, mixing on low speed until just combined.
Add the dry ingredients into the mixer bowl in 4 addtions with the mixer on low until barely just combined.
Scrape the bowl well, reaching the bottom then add the chocolate chips and pecans. Mix only briefly until they're generally dispersed.
Scoop the thick batter into the baking pan and spread evenly with a spatula or offset spatula.
Set the pan in the oven and bake for 28-35 minutes, until the edges are deep golden brown and the middle is puffy, set, and golden.
Cool the bars in the pan completely then cut and serve.
