Chicken Breakfast “sausage”

Do you lean towards the same things for breakfast all the time? I find grabbing a yogurt and fruit is so quick, but I also love variety and I find if I make a big batch of these breakfast “sausage” patties and freeze them, it’s just another option at the ready for a quick healthy breakfast!

I love ground chicken, it’s always used in my weekly meal prep, I make meatballs, burgers and brown it up for stuffed peppers and Asian bowls, but this time we’re using it for breakfast

Place 1 pound of ground chicken in a mixing bowl

Add 1 tsp garlic powder

1/2 tsp black pepper

1 tsp sage (this is really the key spice that makes it taste like breakfast sausage to me)

1 tsp onion powder

1/4 tsp (or more if you like it hot) cayenne pepper

1 tsp Italian seasoning

and 1/2 tsp salt, this is my favorite

Mix everything together well

Line a cookie sheet with parchment paper and form the mixture into approximately 2 inch patties, place an inch or so apart on the sheet

Cook in a 400 degree oven for 20 minutes or until cooked through. Cool completely and freeze in ziplock bag, take 1 or 2 out when ready to eat, they defrost quick, I reheat in microwave and use for egg sandwiches or alongside scrambled eggs.

For the patties
  • 1 pound ground chicken

Instructions
To make the patties
Mix all ingredients well
form into 2 inch patties
place on parchment paper lined cookie sheet approximately 1 inch apart
cook in 400 degree oven 20 minutes
