A cookie for breakfast? Sign me up! I am not a morning person so I usually need to drink 2 cups of coffee before I even think about cooking breakfast. I know this about myself so to prevent future disasters, I make my breakfasts ahead of time. Breakfast cookies are a great way to start your day because you can bake a big batch the beginning of the week, freeze some, and eat the rest each morning.


Warning- these may not last as long as you'd like. My husband just ate 3 of these after work and he loves them.

Ingredients
Strawberry Oat Breakfast Cookies
  • 2 cups rolled oats
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • 3/4 cup finely chopped strawberries
  • 2 tbsp chia seeds (optional)
  • 1/2 cup apple sauce
  • 1 egg
  • 1/2 cup fruit jam
  • 1/4 cup maple or agave syrup
  • 1 tsp vanilla
Frosting
  • 1/4 cup Greek yogurt
  • 2 tbsp powdered sugar
  • 1 tbsp milk
Instructions
Strawberry Oat Breakfast Cookies
Preheat oven to 350
In a medium mixing bowl, mix oats, chia seeds, cinnamon, and baking powder
In another medium mixing bowl mix apple sauce, egg, vanilla, and syrup
Pour wet ingredients into dry ingredients
Add in chopped strawberries
Using a silicone spatula, combine ingredients
Grease a 9x12 baking pan (or use parchment paper)
Place cookie balls on baking pan
Top each cookie ball with desired amount of jam
Bake in oven for 25 minutes
In the meantime, mix frosting ingredients together
Once cookies are done baking and are cooled, drizzle desired amount of frosting over cookies before serving
Tips
  • If frosting is too thick, add milk
  • If frosting is too thin, add Greek yogurt
  • Feel free to add other ingredients such as coconuts, pecans, flax seed, etc. to recipe
