Cheesy Zucchini Bites

I ended up with a bunch of zucchini and I didn't want it to go bad! So I decided to make some cheesy zucchini bites in a muffin tin! They were great fresh out of the oven and also as a quick snack.

I started by shredding the zucchini.

I then used a cheese cloth (this is actually a muslin baby cloth! but it worked the same) to squeeze out all the water. Just wring out the cloth to get as much moister out as possible.


I added 1 egg, chopped onion, and bread crumbs.

I also added parmesan cheese, salt, pepper and garlic powder.

Mix it all together.

I then made a ball with my hands and stuffed into a greased muffin tin.

I then added some mozzarella cheese to the middle and pushed it down and covered with more of the zucchini. You could use mini muffin trays for a great appetizer!

Bake in the oven for 15 minutes on 425 degrees.

Let it cool before removing from the tin and enjoy!

It came out so cheesy and delicious!

Ingredients

  • 2 zucchinis, shredded
  • 1/2 diced sweet onion
  • 1/3 cup grated parmesan
  • 3/4 cup breadcrumbs
  • 1 egg
  • 2 tbs chopped parsley
  • 1/2 tsp each paprika, garlic powder
  • salt and pepper to taste
  • 1/2 cup shredded mozzarella
Instructions

shred zucchini and wring out water in a cheese cloth
add chopped onions and all other ingredients
mix together
make into ball using hands and press into a muffin tin
add mozzarella and more of the mixture
bake for 15 minutes at 425
