Crispy Quinoa Patties

Crispy Quinoa Patties are a versatile, meatless option. Filled with spinach and spices make these healthy, filling, and tasty. They can be cooked in a skillet or baked in the oven. Freezer friendly and great for meal prep!


What can be served with the patties?


  • With or even on top of a salad.
  • As a side for a protein of choice – chicken and fish are my favorite.
  • One or two patties with a runny yolk fried or poached egg on top.
  • On their own, drizzled with hot sauce, or with some beautiful avocado.
  • Served with a dip or sauce – like tzatziki.
  • In a pita or on a sandwich.

Ingredients

  • 1 cup uncooked quinoa
  • 4 eggs
  • 1 small red onion, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup grated parmesan cheese, can substitute other cheese
  • 2 cups fresh spinach, finely chopped
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil
Instructions
Make the Patties
Cook the Quinoa. Cook the quinoa according to package directions.
Toss the Hot Quinoa with Spinach. In a large bowl, toss together the hot quinoa with the chopped spinach so the spinach wilts and is combined.
Add the remaining patty ingredients. Add the eggs, onion, garlic powder, salt, pepper, breadcrumbs, and cheese. Mix together an allow mixture to sit for a few minutes so the liquid absorbs. The mixture should be moist enough to form into patties.
Form patties. Scoop about 1/4 cup of the mixture and form into patties using your hands. It will be a little sticky and I find using wet hands helps.
Cook the Patties
Skillet Directions. Heat the olive oil in a large skillet over medium heat. Cook the patties for 8-10 minutes on each side (covered) until browned and golden. Serve and enjoy!
Oven Directions. Preheat the oven to 400°F. Place patties on a baking sheet and brush tops with oil. Bake in preheated oven for about 15 minutes until golden. Serve and enjoy!
Tips
  • Leftovers: Leftovers can be stored in an airtight container in the fridge for up to 5 days.
  • Freezer Instructions. Before Cooking: Place the formed, uncooked, patties on a baking sheet in the freezer for 4-6 hours until frozen. When frozen, you can place in an airtight bag. To cook, thaw in the fridge overnight and follow regular cooking instructions. After Cooking: Cook the patties according to instructions. Once cooled, place the patties on a baking sheet in the freezer for 4-6 hours until frozen. When frozen, place in an airtight bag. To reheat, thaw in the fridge overnight and bake in a 350°F oven until heated through.
