Simple Sweet Potato Hash

When I think of the ideal fall brunch, I know it needs to involve sweet potatoes. Sweet potato hash is one of my favorites because it’s so versatile—I usually just add whatever extra veggies or meat that I have in the fridge. Bell peppers, zucchini, ground beef, chicken sausage; everything works. If I’m using ground beef or chicken sausage, I sauté that first and use the grease for some extra flavor. There are other days where the only thing I can find are some veggies, which also work perfectly fine! Not optional- adding eggs! Eggs are essential for brunch and really complete the sweet potato hash.

Ingredients

  • 1 medium sweet potato
  • 1/2 medium green bell pepper
  • 1/2 medium red bell pepper
  • 1/2 medium zucchini
  • 3 eggs
  • 2-3 tbsp olive oil
  • Flavor God everything seasoning
Instructions

Heat up the olive oil in the cast iron skillet.
Sauté the diced sweet potato until they're halfway cooked.
Add the zucchini and bell peppers.
Stir in the seasoning until well mixed.
Make wells for the eggs and cover with a lid until they're cooked.
