Caramelized Sweet Potato

These sweet potatoes are cooked in a sugar syrup with cinnamon and prunes and as they soften, they get coated in this lovely caramelised glaze. Arrange these potato rounds on a platter face side up, so you can admire the beautiful orange and gold flesh.


This is a Mexican inspired recipe- it’s popular in mexican cuisine to finish off a meal with a sweet fruit or something like this dish, but here i wanted to add a little middle eastern flair, with the dried prunes and golden raisins. I love this dish eaten next to rice and chicken, but you can make it anytime when you want something sweet too!

Ingredients

  • 2 sweet potatoes, cleaned and sliced into 2-inch thick rounds 
  • ¾ cup brown sugar 
  • 1 cup water 
  • 1 cinnamon stick 
  • ½ teaspoon salt 
  • ½ teaspoon cinnamon
  • 6 prunes 
  • 1 tablespoon golden raisins 
Instructions

In a large pot, combine sweet potatoes, brown sugar, water, cinnamon, and salt. Bring to a boil, lower the heat and simmer until the sweet potatoes are very soft and the liquid has thickened, about an hour. To serve, arrange the sweet potato rounds on a serving platter and scatter around the dried fruits. Sprinkle with cinnamon.
