With the summer coming to an end and barbecues making their final appearances soon, why not include this enticing, flavour-bursting recipe to round off all the meat that's being grilled!


I went with baking my jalapeños in the oven, but you could very much grill it as well.


I've used prosciutto instead of bacon here because the cooking time is much quicker, which lessens the risk of burning your jalapeños. The thinness and softness of prosciutto also means that you're more likely to get a crispy finish and an easier bite. But of course, if you prefer bacon, don't let me stop you!


Additionally, I used cream cheese as even if these jalapeño goodies sit on the table for a little while, you don't need to worry too much about the stuffing getting stiff and gummy.

Ingredients

  • 5 fresh jalapeños 
  • 5 slices thin-sliced prosciutto to wrapped the jalapeños
  • 4 ounces cream cheese softened
  • 4 ounces shredded white cheddar cheese
  • ½ tsbp chili powder or paprika powder
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • Pinch of salt and pepper, adjust to your liking
  • 1 small fresh mozzarella about 200,grams, thinly sliced or use shredded mozzarella 
Instructions

Preheat the oven to 360°F or 180°C. Prepare a baking tray by spraying the bottom with a little oil.
Slice the jalapeños in half lengthwise and using a small spoon, core out the innards.
In a medium bowl, add the cream cheese, cheddar cheese, and spices and mix until well combined.
Fill each jalapeño slice with a slice of mozzarella then fill in with the spiced cheese mixture and topp off with another slice of mozzarella.
Wrap each stuffed jalapeño with one slice of prosciutto
Bake the jalapeños for 13-18 minutes, or until the jalapeños are done to your liking.
Remove from the oven, sprinkle with a bit of chilli or powdered paprika and serve warm.
