  • 1 cup green moong sprouts
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 1 small carrot, diced
  • ½ cup bell peppers (mixed colors), diced

Instructions

If you haven't already sprouted the green moong, soak them overnight, drain the water, and keep them in a warm place to sprout for 1-2 days. Rinse well before using.
In a large pan or wok, heat the oil over medium heat. Add the mustard seeds and cumin seeds. Let them crackle.
Add the slit green chilies and ginger-garlic paste. Sauté for a minute until fragrant.
Add the chopped onions and cook until they turn translucent.
