Squash “Onion Rings”

Are you a fan of onion rings, but not a fan that they are greasy and fried? This is a great fall recipe using seasonal Delicata squash, and of course it’s not greasy fried onion rings, but it is a great alternative for a side dish and very tasty!

Cheesy, crunchy, and wonderfully soft in the middle, made in the oven these are a great way to use this variety of squash.

wash the squash and dry them, leave the skins on they are totally edible, then cut both ends off of the squash

Carefully hollow out all of the seeds with a knife or a spoon, then slice into 1/3 of an inch rounds

In a mixing bowl beat one egg

In another bowl at one cup of shredded or grated Parmesan cheese

Wanted at a time dip the squash round Into the egg

Then into the cheese pressing down so that it adhears

Make sure to do both sides, Do you want these nice and cheesy!

Preheat oven to 350° and place the squash rounds on a parchment lined cooking sheet

Sprinkle with Italian seasoning and any other spices that you like, bake for 20 minutes or until they start to get golden brown and crispy on the edges

Please make a great accompany meant to a burger or with a salad served with or without your favorite ketchup

Ingredients
For the squash rings
  • To Delicada squashes washed and dried
  • One egg beaten
  • One cup Parmesan cheese, shredded, or grated
  • Italian seasoning
Instructions
To make the squash rings
Preheat oven to 350
Line a cooking sheet with parchment
Cut off each squash
Hollow out the seeds fully
Slice the squash in 1/3 of an inch slices
Dip each squash into the egg wash
Dip each squash into the Parmesan Cheese on both sides
Place in a single layer on the cooking sheet
Sprinkle with Italian seasoning
Bake for 20 minutes or until the squash rings are golden brown, and starting to get crispy on the edges
Removing them from the cooking sheet
