Just because summer is over, does not mean we have to say goodbye to summer vegetables. Summer squash is a popular vegetable in the South, and is packed with nutrients. One cup of chopped summer squash contains only 20 calories and 4 grams of carbohydrates. It is a great source of vitamin C, folate, and beta-carotene. Beta-carotene is a phytonutrient that can help prevent certain cancers, heart disease, and vision degeneration.


Summer squash is often enjoyed fried in the summer or mixed with mayonnaise, butter, sour cream and topped with buttery crackers in a casserole at holiday gatherings. These methods tend to be higher in fat and calories. However, it is possible to enjoy summer squash in a healthier manner.


After experimenting a few times with “oven fried” squash, I finally found the perfect recipe. Tossing the squash in Autry's chicken breading and parmesan cheese before baking it gives it a savory, authentic fried taste without all of the extra fat.

Ingredients

  • 1 lb yellow squash sliced
  • 1 tbsp. olive oil
  • 1/4 cup Autry's chicken breading
  • 1/4 cup Parmesan Cheese
  • Salt, Pepper, Garlic Powder, Onion Powder for seasoning
Instructions

Preheat oven to 425 degrees F and spray baking sheet with cooking spray.
Toss sliced squash with olive oil in a large bowl and season with salt, pepper, garlic powder, and onion powder.
Put chicken breading and Parmesan cheese in a freezer ziplock bag.
Add squash to bag and shake until all slices are coated.
Place squash on non-stick baking sheet and bake for 20 minutes or until golden brown.
