HOW TO PREPARE MASHED BUTTERNUT SQUASH:

  • Preheat the oven to 425ºF.
  • While the oven is preheating slice the butternut squash in half lengthwise, and scoop out the seeds.
  • Place flesh side down on a prepared baking sheet, and bake for 40 minutes, or until softened.
  • While the squash is cooling, finely chop a tablespoon of fresh herbs.
  • Once cool enough to handle, scoop out the flesh into a medium bowl. Add the remaining ingredients, and mix together with a hand masher.
  • You’re ready to serve along side your favorite main dish.
Cut the squash in half, and remove the seeds.
Place on a baking sheet, and roast for 40 minutes.
Add the squash flesh and remaining ingredients to a bowl.
Mash everything together.
If desired, spoon into skin to serve.

    I love this recipe. I roast my squash whole, not cut up. Seeds fall out and skin falls off.
