Foil Pack BBQ Potatoes

Warmer weather means all things wonderful - green grass, sunshine and BBQ get together! My family absolutely loves to host in our backyard and these foil pack potatoes are simply a crowd favourite every time we make them.


Simple ingredients come together to whip up super flavourful and tender potatoes. Feel free to use any pre-made seasoning mix you have on hand however the spices listed below are a favourite of mine.


Serve these potatoes up with any accompaniment - grilled steak, grilled chicken, grilled vegetables…whatever you’ve got on hand for a super tasty summertime meal! Hope you enjoy this recipe and happy grilling!

Ingredients

  • 2 lbs white potatoes, thinly sliced
  • 2 Tbsp olive oil
  • 1 tsp each; salt, pepper, paprika, onion powder, garlic powder
  • 4 Tbsp butter
Instructions

Begin by slicing potatoes in thin slices. A mandolin would be helpful here! Use a sharp knife and slice as thinly as possible. Place in a large mixing bowl.
Drizzle olive oil over potatoes and use tongs to toss until potatoes are evenly coated.
Sprinkle over seasonings and use tongs to toss again.
Rip tin foil into 4 equal pieces, about a foot long in length for each piece. On each piece of tin foil, every distribute seasoned potatoes slices.
On top of each pile of potatoes, place 1 tablespoon of butter.
Fold up the edges of the tin foil as well as the sides to create a little tightly wrapped package of potatoes.
Place on a BBQ grill on medium high heat, turning every few minutes until fully cooked, about 20 minutes.
Allow to rest a few minutes before serving. Open each pouch and serve hot. Enjoy!
