A classic recipe with German and French origins, a slice of quiche is rich and filling and easy to serve to crowds. If you wish to make this a main dish, you can serve alongside fresh salad to cut through the richness, or some blanched vegetables like asparagus or spinach to get some fibre in.


The quiche itself is normally served at room temperature, but can be warmed a little especially if it has been in the fridge. Quiche does quite well frozen; when reheated in a microwave, it retains most of its qualities, the only thing is that the crust may not be as crispy.

Ingredients

  • 1 Shortcrut or prepared pie shell
  • 1 tbsp butter
  • 1 medium yellow onion, sliced
  • 1 clove garlic, minced
  • ½ cup bacon thinly sliced or cut into small cubes
  • About 100 grams or 3.3 oz thinly sliced cooked ham, cut into thin strips
  • 4 eggs
  • 1¼ cup fresh cream
  • Pinch of salt and pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped chives (for garnish)
Instructions

I used an 8inch cake form. Prepare and bake the crust as per package directions.
Keep the oven hot at 350°F.
In a medium frying pan, add the butter, sliced onion, garlic, and bacon, cook over medium high heat until bacon is light golden and the onion is soft. Remove from the heat and leave to cool.
In a medium bowl, using a hand whisk, add the eggs, fresh cream, salt and pepper, and whisk to combine.
Start to assemble by adding the bacon and onion garlic mix on top of the cooked crust. Then slowly pour over the egg mix. Sprinkle the shredded cheese evenly. Garnish with chopped chives. Bake in the middle of the oven for about 35-40 minutes until the top is golden and the centre is cooked but still a little jiggly.
Let it rest for about 5-10 minutes before serving.
