French fries are my favorite food.

I can say that with the utmost confidence.

Skinny fries, steak fries, spicy fries, CURLY FRIES!!!!

OK my mouth is watering just thinking about it.

And the best part…making fries at home is SO EASY!

Grab some potatoes (or others…which I’ll talk about later) and meet me in the kitchen!

A few things to note before we get started:

  • In this example, I’m using an air fryer, but the process remains the same for oven-baking or frying, which I’ll also explain.
  • For potato fries, you’ll want to use a high starch potatoes like russet potatoes – they have the lowest water content and crisp up best.

First, you’ll want to give your potatoes a good scrub…they grow underground ya know.

I mean take a look at the difference in these two beauties!

From there, slice the potato into the fry size of your choice. I like steak fries, so I cut the potato into 4 slices.

Then took each slice and cut them into sticks. They don’t have to be perfect, just try and make them the same size.

Now comes the essential step!

Vic Trick: Soak those fries in cold water for at least 30 minutes to draw out the starch. This prevents them from sticking together and makes them extra crispy.

Preheat the air fryer to 375°.

Remove the fries from the water and pat dry with a paper towel. Then toss them with a little olive oil and the seasonings of your choice.

Vic Trick: Salt & Pepper are SO ESSENTIAL here! Salt + Potatoes = Love. This will also help them crisp up nicely.

But whatever other seasonings you’d like to add is totally up to you. I like spicy fries, so I’ll use a little cayenne or a chipotle blend of some sort.

And garlic powder of course!!! YUM.

Place them in a single layer into the air fryer and cook for about 15 minutes or until crispy.

Vic Trick: the skinnier the fry, the quicker it will crisp. The 15 minutes is for a steak fry, I’d make it 11-12 for a skinnier fry. But, as always, just keep an eye on them!

Once they’re crispy, they’re ready!!!

If making in the oven, cook them, in a single layer on a baking sheet, for about 30-35 minutes at 425°. Tossing halfway through to make sure they crisp evenly.

Keep in mind, you can make fries out of SO MANY THINGS.

Some of my favorites are:

  • Parsnips
  • Jicama
  • Carrots
  • Butternut Squash

The only difference is there’s no need to soak first! Otherwise, the process is exactly the same. Keeping in mind that cooking times may vary.

Here’s a nice delicious plate of crispy spicy parsnip fries served with Vic’s Tricks To…Quick Aioli. YES. SO GOOD.
