Ingredients

  • 1 white onion
  • 1 tbsp + 1 tsp olive oil
  • 1 tbsp garlic granules
  • 1 tbsp fresh ginger, chopped
  • 10 stems coriander
  • 1/3 tsp black pepper
  • 1 tsp salt
  • 1.5 cups red lentils
  • 400 mL dairy free coconut milk
  • 1.5 tbsp vegan tom yum sauce
  • 2 cups vegan onion soup broth
Instructions

Dice the onion. In a medium saucepan over medium-high heat, heat up 1 tbsp of olive oil. When hot, add in the onion and stir with a wooden spoon until the onion is translucent and starting to brown. This should take around 5 minutes. Remove from heat.
Using and mortar and pestle, grind together the garlic, ginger, coriander, pepper and salt until it turns to liquid. Set aside.
Return onions to a high heat and add in the lentils, coconut milk, broth and mortar and pestle mixture. Use the wooden spoon to fully combine.
Allow the mixture to boil and then turn the heat down to medium. Cook for approximately 20 minutes (the lentils should soften). Serve hot.
Tips
  • Serve with additional coconut milk, brown rice or steamed vegetables.
