Black-eyed peas are a Southern tradition dating back to the Civil War. They were originally grown for livestock feed, but are now a staple of Southern meals. I mean who hasn’t eaten them on New Years Day in hopes of bringing luck and fortune for the new year (we may need to eat more next year!)?!

Besides bringing luck, these little peas can also bring health! Just 1/2 a cup provides 7g of protein, over 20% of recommended daily fiber intake, and 10% of recommended daily iron intake!

Many turn to canned black-eyed peas due to the misconception that homemade are time consuming, but I’m here to prove you wrong! This recipe is ready in under an hour using your Instapot, no soaking required!

  • 1lb black eye peas, rinsed
  • 4 cups low sodium chicken broth
  • 1 smoked turkey sausage link, sliced
  • 1 medium yellow onion, diced
  • 1 tbsp. minced garlic
  • 1 tbsp. olive oil
  • Salt and pepper

Turn Instapot to sauté and add olive oil.
Sauté onion, garlic and turkey sausage until cooked (about 3-5 minutes).
Add black-eyed peas and chicken broth.
Set pressure cook time to 40min.
Let pressure release naturally.
Add salt and pepper to taste and serve!
