Chocolate Chip Loaf Cake

This easy chocolate chip loaf cake is made in only one bowl and takes under 20 minutes to make before putting it into the oven. It's the perfect breakfast or afternoon pick-me-up and will make your day so much sweeter. It's easy to make and loaded with chocolate in every bite. I ran out of butter prior to baking and this recipe came to the rescue (hello, no butter!) All the ingredients come together in one bowl and in one loaf pan, making it super easy to make with minimal clean up (so easy- A BIG PLUS!) Happy baking y'all :)

Ingredients

  • 3 large eggs, room temperature
  • 1 cup sugar
  • 1 1/2 cups buttermilk
  • 3 cups all-purpose flour
  • 2 cups semisweet chocolate chips
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp vanilla extract
Instructions

Preheat oven to 350°F.
Beat eggs, sugar and buttermilk until well blended. Add vanilla extract, olive oil, and salt and mix until combined. Gradually mix in the all-purpose flour. Fold in chocolate chips.
Transfer to a greased loaf pan. Bake for 65-70 minutes or until a toothpick comes out clean. Allow to cool in pan for 5 minutes before removing to a wire rack to cool completely.

    Made this today. What a waste of ingredients. Came out gummy, thick and heavy. Tooth pick came out clean. Cooked it the required time. Did you leave out the leavening in the recipe? Been baking for many years and never had this happen.
