Roasted pumpkin seeds is super easy to make and your family will love them for a snack, dessert or even over yogurt. This pumpkin seed recipe is a delicious way to enjoy the fall season. All you need is fresh pumpkins seeds from your pumpkins, olive oil and salt. You can serve it over cereal, or yogurt which is one of my favorite ways to eat it.

When I was a young child my mom would save the pumpkin seeds from the carved pumpkin we made. She soak the seeds in vegetable oil and roasted them with brown sugar. It was just as delicious as the candy we get from Halloween.

What Are Pumpkin Seeds
The seeds are flat and oval. They have a white outer husk and are light green. Some are hulless which are white and these were in the pumpkins I carved. The American Heart Association recommends a quarter of a cup a day for overall healthy diet, which is 30 g. This is the perfect amount of protein, fats, fiber , zinc and selenium and magnesium .
My parents were always eating healthy and I am so happy they exposed me to such a healthy snack.

Ingredients To Make Roasted Pumpkin Seeds
- 1 cup pumpkin seeds: I used pumpkin seeds without the husk. You can find them in your grocery store or get the seeds like I did by having fun carving a pumpkin.
- 1/2 teaspoon salt.
- 1 tablespoon of olive oil or vegetable oil: If you are using olive oil just mix the seeds with salt. If you prefer to add some brown sugar for extra sweetness use the vegetable oil as well as the salt. Olive oil to me doesn’t taste good with brown sugar.
- 1 tablespoon of brown sugar (optional)
How To Make Roasted Pumpkin Seeds In Oven
- If you are getting seeds from a pumpkin you need to clean them. Let dry before next step.
- Coat the seeds with olive oil and salt. If you are using vegetable oil do the same thing.
- Spread the mixture on a pan. The pan can be covered with parchment paper or greased well with olive oil or vegetable oil.
- Bake for 15 minutes until golden brown at 350°F. Turn over after 10 minutes. The crispier the better for me. Your choice.
- (Optional)If you want the seeds to be sweeter, sprinkle brown sugar over the seeds use vegetable oil instead of olive oil.
The Best Pumpkins For Seeds
- Ask the experts at a pumpkin patch:
- You would think large pumpkins have lots of seed, but that is not the case.
- Pick a pumpkins that contains hulls seeds. Usually the Styrian or Kakai pumpkins have the best seeds.
- Pick a hollow pumpkin with large cavity usually have delicious seeds.
Where To Store the Pumpkins Seeds:
I store my pumpkins seeds in a mason jar that is air tight. That way I keep them fresh.

Ingredients
- 1 cup of pumpkin seeds
- 1 tablespoon of olive oil or vegetable oil
- 1/2 teaspoon of salt
- 1 tablespoon of brown sugar (optional)
Instructions
- Clean pumpkin seeds and let dry.
- Coat seeds with either olive oil or vegetable oil. ( If you are adding brown sugar use vegetable oil along with the salt.
- Add the salt and mix well.
- Place mixture on greased pan or use parchmont paper.
- (Optional) Sprinkle brown sugar over the vegetable oil coated seeds for a sweeter version of the roasted pumpkin seeds.
- Bake 350°F for 15 minutes until golden brown, Turn over the seeds after 10 minutes.
