Moroccan Almond Pastries (Briwat)

This Moroccan sweet, also known as Briwat or Briouat, is a North Africa delicacy that is popular among families to share during special occasions such as Eid and Ramadan. These traditional pastries are filled with almond paste and coated with honey. They’re popular year-round as a tea time and special occasion treat, and are one of the iconic Moroccan pastries which visitors in Morocco will be likely to try. They were even one of my favorites growing up! They're special because they are shaped like triangles and are small and cute! You'll be sure to enjoy these with family and friends! Happy baking!

Ingredients

  • 1 Package spring rolls
  • 1 pound almond paste
  • 2 tbsp orange blossom water
  • 3 tbsp flour
  • 3 tbsp water
  • 1 cup honey
  • 1/3 cup water
  • Juice from 1 lemon
  • Oil for frying
Instructions

In a medium mixing bowl, combine the orange blossom water and almond paste and roll them into small balls
Using a sharp knife, cut the spring roll dough into 6-inch long by 1 inch wide strips.
Fill the spring rolls to create triangles. Mix the flour and water together and use as a paste to seal.
Combine the water, honey and lemon juice together and bring to a boil (turn off as soon as it comes to a boil).
Heat up oil on medium heat and fry the pastries for 40-50 sec on each side.
Immediately transfer to the honey glaze
