How to Make Homemade Panko Bread Crumbs

My kids love coated fish and chicken, so we use a lot of coatings. We always make our own coatings, and now I make my own breadcrumbs and panko breadcrumbs.


I love that this tastes better and it reduces food waste. I collect stale bread in a bag in the freezer and then make homemade panko breadcrumbs when I need it.

There are a few differences when learning to distinguish panko vs breadcrumbs. Fundamentally, the biggest difference between panko vs breadcrumbs is that Panko is made using bread without crust.

Technically, homemade panko breadcrumbs do not need to be seasoned. However, I still recommend seasoning it to enhance the flavor.


You could always leave it unseasoned and season the Panko separately before each use so you can adjust the flavor of the bread crumbs for each dish.

Here are some seasoning ideas:

  • Combine thyme, basil, and black pepper to taste.
  • Add dry ranch seasoning to taste.
  • Add taco seasoning to taste.
  • Add Italian seasoning.

Due to the use of crustless bread, as well as the special recipe, Panko is a lot more light and airy than bread crumbs. Panko absorbs less oil, meaning that the food is often a lot crisper and cruncher as well.



If you have the patience, you can make Panko without using a food processor. To do this, you will either want to tear up the bread before baking it, or smash the baked bread with meat tenderizer or another blunt object.


I recommend placing your baked bread into a ziploc bag and hitting it with a meat tenderizer or a rolling pin in order to break it into tiny crumbs for baking.

Ingredients

  • 3-4 slices of white/wheat bread
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground pepper
  • 1/4 teaspoon of dried herbs or to taste
Instructions

Remove the crust from each slice of bread.
Separate the slices of bread with your hands and put it into a bowl.
Add in your spices, salt, and herbs and then mix it all together.
Break the slices into smaller pieces and put them into a blender.
Cover your blender and grind up the bread using medium speed in five to ten second pulses. After about forty to gift seconds the crumbs should be ready.
Place the crumbs on a parchment paper lined baking sheet. Bake the crumbs in the oven for four to five minutes at 300 degrees F. For a golden coloring, bake the crumbs just a little while longer. Further, the toasting time for larger crumbs is still the same.
Once the crumbs are to your liking, let cool and transfer them to a sealable container for storage.
