Ingredients

For the skewers

  • 24 cooked tortellini
  • 24 cherry tomatoes
  • 24 black olives
  • 24 slices salami
  • 24 cubes of your favourite cheese (I used mozzarella)
  • 24 slices roasted red peppers

For the dressing

  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp grainy mustard
  • Salt and pepper, to taste

Instructions

For the dressing

Mix together the dressing ingredients and whisk until smooth.
Place covered in the fridge until ready to use.

To assemble

Use 8-inch wood skewers to assemble the antipasto skewers.
Begin by placing one of each ingredient on each skewer and pushing them tightly together. Fold the salami in half and then half again for it to fit.
Add another round of each ingredient to fully fill each skewer.
Place all finished skewers on a serving plate and set aside.
Pour prepared dressing over the skewers when you are ready to serve.
