To make vegan minestrone soup, start by heating a tablespoon of olive oil in a large pot over medium heat. Add one diced onion, one diced carrot and one diced celery and sauté until softened. Stir in one can of diced tomatoes, one cup of vegetable broth and one cup of water. Bring the soup to a boil and then reduce the heat to low. Stir in one cup of cooked pasta, one cup of cooked kidney beans and one cup of chopped spinach. Season the soup with one tablespoon of dried oregano and one teaspoon of salt. My mom loved making lentils weekly so I grew eating lots of it.

This protein-packed stew is made with lentils, vegetables and a blend of warming spices. Heat a tablespoon of vegetable oil in a large pot over medium heat and add one diced onion, one diced carrot and one diced celery and sauté until softened. Stir in one cup of dry lentils, one can of diced tomatoes and one cup of vegetable broth. Bring the stew to a boil and then reduce the heat to low. Stir in one cup of chopped kale and season the stew with one tablespoon of cumin and one teaspoon of chili powder. Simmer for 20-25 minutes, until the lentils are tender. This is an all time favorite of my husbands. If I left it up to him he eat this every day.

Heat a tablespoon of vegan butter in a skillet over medium heat. Assemble your sandwich with two slices of your favorite vegan bread, a slice of vegan cheese and your choice of fillings (such as sliced tomato and avocado). When the skillet is hot, place the sandwich in and cook until the bread is golden.

I am Spanish decent so I love quesidilla its one of my favorite recipes to make for my family.

This flavorful and satisfying quesadilla is made with a mix of beans, vegetables and vegan cheese and is cooked until golden. Heat a tablespoon of vegetable oil in a skillet over medium heat. Assemble your quesadilla with one tortilla, a layer each of refried beans, sautéed vegetables (such as diced onion or bell pepper) and some vegan cheese. When the skillet is hot, place the quesadilla in and cook each side until the tortilla is crispy. Garnish with cilantro.
