The Best Sick Day Soup
This simple and nourishing soup is hands down my favorite thing to cook when my family is feeling under the weather. It’s such a cozy and comforting dish with a very mild flavor that just hits the spot and instantly helps us all feel better.
The ingredients for this soup are so basic, but contain a vast amount of antimicrobial and antiviral properties that will help to fight off illness. I like to add a small amount of pasta to the soup to give it a little more sustenance, but the broth on its own is just as delicious.
Because the soup is puréed even fussy little eaters will enjoy this soup, on a sick day or not.
Really this soup is tasty anytime, but next time you are feeling under the weather give this one a try!
To make this soup, begin by washing and roughly chopping the veggies before adding them to a medium sized pot.
Add in four cups of chicken or bone broth. Bring the soup to a boil and then cover and turn down to medium heat. Simmer covered for 25 minutes or until the veggies are fork tender.
Let the soup cool for a several minutes before carefully transferring it to a blender. Blend until completely smooth.
Transfer the soup back to the pot and add in your favorite small cooked pasta. Bring the soup back to a simmer until the pasta is thoroughly heated.
Serve on its own or with your favorite toasted bread.
Enjoy, and feel better soon!
