Fall is here which mean cold and flu season is right around the corner. To help fight off those nasty germs, here is a soup that can not only boost your immune system but fill you up with fresh veggies.
The beautiful fall color of this soup is made by the spice turmeric.
Turmeric is the main spice in this recipe. Not only is turmeric great for immune health, it's also great for joint, digestive and cardiovascular health.
Cauliflower is one of many veggies in this soup. Did you know that cauliflower contains sulforaphane which is one of the most important compounds that enhances the health of your heart?!
Immune System Booster Soup
Recipe details
Ingredients
- 3 cups small cauliflower florets
- 1 cup sliced carrots
- 1/2 cup chopped onion
- 3-4 cloves garlic
- 3/4 teaspoon cumin
- 1-1/2 teaspoons turmeric
- 1-1/2 teaspoons ground ginger
- 3/4 teaspoon salt
- 2 15 oz cans diced tomatoes
- 1 15 oz can of chickpeas
- 2 cups vegetable stock
Instructions
- Chop onion and garlic
- Cut cauliflower into small florets
- Slice carrots
- In a medium pot, sauté the onions and carrots over medium heat for about 5 minutes, stirring occasionally.
- Add the cauliflower, garlic, cumin, turmeric, salt and ginger and sauté for 1 minute
- Add tomatoes, chickpeas and broth
- Bring to a boil then cover and reduce heat to simmer.
- Simmer 30-35 minutes until vegetables are tender but not mushy.
