Easy Week Night Goulash

This is an easy fast dish to make on the week days when you are pressed for time and need food fast for your family. Growing up my mom would make this with our canned tomatoes we always did every summer. My mother in law always added kidney beans to hers. I think everyone has a different way of making this dish. This is my way because of working with the kids were younger and always having activities they were involved in mine became a very fast and easy one. I brown my burger I use the farm burger which is 90/10 I cut up an onion and add that to the burger and cook until the onion is tender and the burger is browned. While that is cooking I boil my water for the macaroni. Then I mix the two together and add either tomato juice or diced tomatoes and like my mom I usually use my canned tomatoes. Cook until all warmed together. You can add any other vegetables or beans you want to add more protein. I use to love my mother in laws version of adding the kidney beans.

I just used tomato juice here instead of tomatoes.

I brown my burger with the onion first.

Drain your macaroni or whatever noodle you like. I have used the small shells before too.

Mix it into your pan with the tomato juice until all warmed.

It really is good especially with a piece of homemade bread.

Ingredients
For the Goulash
  • 2 cups elbow macaroni
  • 1 lb burger
  • 1 small oinion diced
  • 1 bottle of tomato juice or 2 16 oz cans of tomatoes
Instructions
Goulash
Brown the burger with the diced onion until cooked and onion is translucent.
Heat the water for the macaroni until boiling
Add the macaroni and cook for 8 minutes.
Drain the macaroni and add to the pan
Add the burger onion mixture to the macaroni.
Add tomato juice and heat until warmed to your taste.
Serve.
