Palak paneer is a very famous Indian curry ,made with golden pan fried paneer and spicy ,creamy spinach curry. This curry pair well with roti,naan or rice.


It is a great way to sneak in the greens in child's diet. This recipe comes together quickly and tastes super delicious.

Spinach gives this sauce naturally thick and creamy consistency and beautiful green color. Generally spinach is blanched for this recipe. But here is a quick version of the recipe where i sauteed the spinach with onion and garlic and then pureed everything together.


Generally Indian curry contains cashews that make the curries richer and thicker. But this is a nut-free version of traditional palak paneer . Here I used Pumpkin seeds instead of cashews to get that creamy texture.

A little fresh cream is added to the curry to get creamier texture and to cut down any bitterness from spinach. But here i used fresh yogurt for the same. I like to add yogurt instead of cream to my curry. It enhances the taste and the texture.

Here I used store bought paneer. You can easily get paneer and all the spices at any Indian store. paneer is also super easy to make at home . Let me know in the comments if you want me to share the recipe of paneer.

Ingredients

  • 150 gm Paneer
  • 150 gm Spinach Leaves
  • 2 Tbsp Oil
  • 1 Medium Sized Chopped Onion
  • 1 Small Tomato Chopped
  • 2-4 Green Chilies(According to the taste)
  • 1 Tbsp Grated Garloic
  • 1/2 Tbsp Grated Ginger
  • 1 1/2 tbsp Pumpkin Seeds
  • 2 Tbsp Whisked Yogurt(Or Cream)
Ground Spices
  • 1 Tsp Red Chili Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Tbsp Coriander-Cumin Powder
  • Salt To Taste
  • 1/2 Tsp Garam Masala
  • 1/2 Tsp Kitchen King Masala(Optional)
  • 1/2 Tsp Kasuri Methi(Dried Fenugreek Leaves((Optional)
Whole Spices
  • 2 Cardamom (Elaichi)
  • 1 Clove
  • 1 Small Cinnamon Stick
  • 2 Bay Leaves
  • 1 Dry Red Chili(Optional)
Instructions
Fot the Curry
In a pan heat a tbsp of oil and add chopped onions,tomatoes,garlic and ginger to it.
Saute the veggies for 3-4 minutes on medium heat or until raw smell of onion garlic is gone.
Then add the ground spices along with salt and cook for another 2-3 minutes on medium heat.
Then add washed spinach leaves and saute for a minute. When spinach leaves turn soft, turn off the heat.
Let the mixture cool down slightly and blend well into puree.
Then in the same pan add 1 tbsp oil and all the whole spices .
Add Paneer cubes into that and saute until golden brown .
Then add the gravy you prepared with some whisked yogurt or cream and salt if needed , and mix everything well.
Add the gravy in a serving bowl and drizzle some whisked yogurt or cream and serve with hot naan or rice. Enjoy!
