There are probably thousands of chicken soup recipes out there. So I can’t speak for all of the chicken soup recipes but I can tell you this. That most of the ingredients found in chicken soup are naturally gluten free aside from the noodles. The most commonly made type of chicken soup is chicken noodle soup.

My chicken soup recipe is gluten free because instead of using noodles I used rice. All varieties of rice are naturally gluten free. You can make gluten free chicken noodle soup by swapping out the regular noodles or rice in this recipe for gluten free noodles.

The ingredients in chicken soup are typically butter, chicken, stock, bouillon, dried herbs and vegetables.

How To Make Gluten Free Chicken Noodle Soup From Scratch


Here are the four simple steps you need to make chicken soup!


  • Step 1: Melt butter over medium heat in a dutch oven. Season chicken with salt and paper. Brown chicken on both sides for 2-3 minutes each. Remove chicken from the pot and set aside on a plate.
  • Step 2: Add garlic, onion, carrot, celery, broccoli, Italian herbs, salt and the bayleaf to the pot. Saute for 10 minutes or until the vegetables are soft.
  • Step 3: Add the rice, chicken, parsley and thyme back into the pot. Saute for 5 minutes then add chicken stock. Bring the soup up to a boil and then reduce to a simmer. Let cook partially covered for 30 minutes.
  • Step 4: Turn off the heat and add remove the chicken. Shred the chicken meat off the bone with a knife and for. Discard the bones and return the meat back to the pot.

One of my favorite things about this recipe is that you don’t need any fancy kitchen appliances to make it. I can guarantee that you have all of the equipment in your kitchen to make chicken soup. Even if you’re staying in a vacation rental everything you need will be right there.

The best pot you can use to make chicken soup is an enameled cast iron pot. I love using my Le Creuset quart soup pot or my dutch oven to make chicken soup. There are so many benefits to cooking with an enameled cast iron pot!

Cast iron pots with an enamel coating have all the benefits of cast iron without the hassle of having to clean it. The enamel coating doesn’t rust like regular enamel. Not to mention that enamel is naturally nonstick so clean up is a breeze. Also the finish on enamel pots are non-reactive and also they are non leaching.

Cast iron pots that don’t have an enamel coating reacts with acidic ingredients. So you can cook with lemon juice, tomatoes, vinegar and other acidic flavors that are important for creating flavor in chicken soup.


Ingredient Substitutions for this GF Chicken and Rice Soup


  • White Onion: Instead of white onion you can use shallots, Spanish onion or yellow onions with similar result.
  • Butter: If you don’t have butter you can use ghee or olive oil as a substitution. If you would like to make vegan risotto, olive oil is a great fat to use instead of butter.
  • Fresh Garlic: If you don’t have fresh garlic on hand you can use 1 teaspoon of garlic powder or 1 tablespoon of jarred garlic.
  • Brown Rice: While brown rice is the healthiest rice you can also use other non starchy types like forbidden black rice, sushi rice, jasmine or plain white rice.
  • Vegetable Stock: Chicken or beef stock also work well with this recipe. In a pinch you can use plain water.
  • Instead of Fresh Parsley: You can use dried parsley or fresh cilantro.
  • Chicken Thighs: Instead of chicken thighs you can use a whole chicken, chicken breast or drumsticks.
  • Rosemary: 1 tablespoon of dried rosemary will work just as well as one sprig of fres


Is Chicken Broth Gluten Free?


Most brands of chicken soup are naturally gluten free because the ingredients used to make chicken stock are plant based and meat. Meat and vegetables are all naturally gluten free. If you are planning on making your own chicken broth or chicken stock you don’t have to worry about gluten.

However if you plan on buying chicken stock at your local supermarket like target, Kroger, Publix, K-mart, or Walmart here are a few ingredients you should look out for.

Here are a few tips and tricks I’ve learned over the years so that your chicken soup comes out perfectly the first time and the one hundredth time.


  • Cut all of the vegetables the same size
  • Don’t saute the garlic first. Garlic burns faster then the other vegetables and will make the soup taste bitter.
  • Use an enameled cast iron pot.


Short Cuts For Making This Gluten Free Chicken Soup Recipe


Even though this gf chicken and rice soup is easy to make. It still requires chopping. The truth is homemade food from scratch is always going to take longer then picking up dinner from the local restaurant or opening a gluten free can of chicken soup. But there are tricks you can use to speed up the cooking time:


  • To save time buy pre-chopped carrots and onions.
  • Don’t use the celery stems.
  • Use jarred garlic.
  • Buy pre-peeled garlic.
  • Use store bought vegetable stock.
  • Use pre-cooked or pre-shredded chicken.
  • Use grated carrots instead of whole carrots.


Can I Make Chicken and Rice Soup Ahead Of Time?


Yes! You can absolutely make this chicken soup ahead of time. In fact, I think that this soup tastes better the second day. Letting your chicken soup sit for a few hours to a day before you eat it allows the ingredients to infuse the broth with tons of flavor.


How to Reheat Chicken Soup You Made Ahead Of Time


If you make this chicken soup a day in advance you can store it right in the pot in the fridge and then pop it on the stove and reheat it at medium low. Stir the soup every few minutes so that it heats evenly. Once the soup starts to simmer it’s ready to serve.


Can You Freeze Chicken Soup


Yes! You can absolutely freeze chicken soup. Freezing chicken soup is great for meal prepping. I love freezing chicken soup in pint sized containers for single serving lunches or dinners.

Progresso makes a gluten free homestyle chicken soup called Progresso Gluten Free, Homestyle Chicken Soup. However, Progresso Traditional, Chicken Noodle Soup and Progresso Rich & Hearty, Chicken & Homestyle Noodle Canned Soup are not gluten free.


Can I Use Cooked Chicken Instead of Raw?


Yes you can use cooked chicken instead of raw chicken in this gluten free chicken soup recipe. Since cooked chicken will get rubbery if you cook it longer put the cooked chicken in the soup in the last ten minutes of cooking time. That way the chicken will have enough time to absorb the broth and warm up.

If your precooked chicken is not shredded make sure to shred it with a knife and fork into bite sized pieces before putting it in the soup.


Is Campbells Stock Gluten Free?


Yes, according to Campbell’s company website all of their stock and broths are gluten free. If you are in a pinch and need to buy some stock while Campbells isn’t my first choice because it’s highly processed and has a lot of salt in it you can use it without running the risk of ingesting gluten.

Instructions
