Turkey Pumpkin Chili

Football in the South is BACK!! And around here, football and chili (aka chili beans as some like to call it) go together like peas and carrots. There is nothing better than a hearty bowl of meat and beans topped with all of your favorite fixings on a cool Saturday or Sunday afternoon while watching your favorite team (GO WOLFPACK) bring home a victory!


Most chili recipes consist of ground beef, beans, tomatoes, and peppers; however, I like to switch things up a bit. I never know how my husband will react to new chili ingredients, but luckily, this pumpkin, turkey chili recipe was a winner


The turkey provides a lean protein option and the unexpected pumpkin adds a depth of flavor and nutrients. Pumpkin is packed with vitamin A and C, which are antioxidants shown to help prevent chronic disease and boost immunity. It is also full of potassium, which benefits heart health by lowering blood pressure.

Ingredients

  • 1 tbsp. olive oil
  • 1 lb. lean ground turkey
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 28 oz can diced tomatoes
  • 15.5 oz can kidney beans
  • 4oz can green chilis
  • 1/2 cup pumpkin
  • 2 tbsp. cumin
  • 2 tbsp. chili powder
  • 1 tbsp. minced garlic
Instructions

Heat olive oil in a large skillet over medium heat and sauté onions, peppers and garlic until soft. Transfer to large pot.
In same skillet, sauté ground turkey until cooked through. Transfer to pot with onions and peppers.
Add canned tomatoes, beans, chilies, pumpkin, chili powder, and cumin to pot and stir.
Cook on low for 2-3 hours.
