Tuscan Kale and Bean Soup

Let’s talk about soup! I could eat soup for every meal and be as happy as a clam. I love the aroma of soup cooking on the stovetop and the rich flavors it develops. To me, there’s nothing better than having a delicious bowl of soup on a cold, rainy day. I will admit though, I’m very impatient and my favorite types of soup are the ones that can cook FAST. This Tuscan Kale & Bean Soup with sausage is so comforting and is ready in under an hour! It’s one of the best soups I’ve ever had and also one of the easiest to make. Check out the recipe below!

- 2 tablespoons olive oil
- 2 garlic cloves
- ½ yellow onion
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- 1 tablespoon of Auntie Nono’s Everything Seasoning
- 4 sausage links
- 1 can of cannellini beans
- ½ cup chicken broth
- 1 ½ cups chopped Tuscan Kale leaves
- ¼ cup grated parmesan cheese

- Get out a dutch oven or large pot and add the olive oil
- Dice your onion and add to the pot then cook on medium heat for 5 minutes
- Dice your garlic cloves into very small pieces and add to the pot
- Continue cooking on medium heat for 5 minutes until the onions are translucent
- Dice your sausages into ½ inch pieces then add
- Drain your cannellini beans and add to the pot with your chicken broth
- Stir for a few minutes then turn your heat to low, cover and let simmer for 30 minutes
- After it’s been 30 minutes, add your chopped kale (be sure to remove the stem) and parmesan cheese
- Cover again and let simmer for 15 minutes
- Turn off the heat and serve!

Half of a cup of broth does not seem like enough!
This is one of my favorite soups! So thick, rich, flavorful, and delicious!
